    Delicious Spicy Cauliflower Bites: Two Irresistible Versions

    These baked spicy cauliflower wings are such a fun appetizer or snack! They have irresistible crispy edges and a delicious spicy, tangy flavor. I have two versions for you to try. One can be altered for those who cannot eat wheat and one for those who cannot eat dairy. I have also included a great Buttermilk-Herb Dip Recipes below.

    Buffalo Cauliflower Bites with dairy

    • ¾ cup (95 grams) all-purpose flour
    • ½ teaspoon garlic powder
    • 1 cup (245 grams) buttermilk or milk
    • 1 large head (585 grams) cauliflower, cut into florets (about 6 cups)
    • ½ cup (120 grams) hot sauce
    • 1 tablespoon chopped fresh flat-leaf parsley
    1. Preheat oven to 425°F. Line a baking sheet with foil. Place a cooling rack on top, and coat lightly with cooking spray.
    2. Whisk together flour, garlic powder, and buttermilk in a large bowl.
    3. Add cauliflower, tossing to coat. Shake excess batter from cauliflower, and place florets on rack. Discard any remaining batter.
    4. Bake for 20 minutes. Carefully remove the cauliflower from the baking sheet with tongs, and toss in hot sauce. Return to rack, and bake 10–12 minutes until cauliflower browns on edges.
    5. Sprinkle with parsley.

    BBQ Cauliflower Bites

    • ⅔ flour (wheat free option: 1/3 almond flour and 1/3 brown rice flour)
    • ¼ cup cornstarch
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon paprika
    • ½ teaspoon sea salt
    • ¾ cup water
    • 1 cauliflower head, about 2 pounds, broken into large florets
    • Hot BBQ Sauce, for brushing
    1. Preheat the oven to 450°F and line two large baking sheets with parchment paper.
    2. In a large bowl, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, and sea salt.
    3. Add the water and whisk until smooth.
    4. Add the cauliflower florets and stir to coat.
    5. Lift the cauliflower florets out of the batter, allowing any excess batter to drip back into the bowl.
    6. Arrange cauliflower in a single layer on the prepared baking sheets and bake for 10 minutes.
    7. Use a spatula and carefully flip the florets. Return to oven and bake for another 10 minutes.
    8. Remove the cauliflower from the oven and brush with sauce to coat. Bake for another 12 to 15 minutes, or until the cauliflower is dark and crisp around the edges. See the picture above.
    9. Remove from the oven and brush with additional sauce.

    Buttermilk-Herb Dip

    • ¼ cup plain nonfat yogurt
    • 2 tablespoons buttermilk
    • 1 teaspoon chopped fresh chives
    • ¼ teaspoon dried or fresh chopped dill
    • ¼ teaspoon garlic powder

    Combine dip ingredients in a small bowl, and refrigerate until ready to serve.
