    Delectable Marinated Flank or Flat Iron Steak for Grilling

    The flavor of this marinade is out of this world. It has been a crowd-pleaser for years in my household and incredibly easy. The steak marinade consists of the following ingredients: a flavorful oil, lots of garlic, soy sauce, red wine vinegar, and honey. Recipe below.

    What is Flank Steak?

    Flank steak is a cut of beef taken from the abdominal muscles of the cow. The cut is long, flat, and has a significant grain to the meat. It is known to have a bold flavor and chewiness.

    Flank steak is used in dishes such as London broil and as an alternative to the traditional skirt steak in fajitas. The noticeable grain in the cut is because it comes from a well-exercised part of the cow. It is traditional to cut across the grain of the meat to make the serving more tender.

    What is Flat Iron Steak?

    In the US we call this cut flat iron steak. But in the UK, it is referred to as butler's or feather steak. In Australia and New Zealand, the cut is referred to as oyster blade steak. The flat iron steak is cut with the grain from the chuck or shoulder portion of the cow.

    Why Marinate?

    Marinating meat works by adding flavor to meat. It also aids in tenderizing meat. Marinades often have some acidity added to the mixture. Often in the form of vinegar (as in this recipe) or citrus such as lemon juice. Even enzymes can be used which are commonly found in fruits like mangoes.

    In the recipe below, we marinate the meat for at least 4 hours. This greatly helps tenderize these types of cuts.

    Delectable Marinated Flank Steak

    • 1 Flank or Flat Iron steak, about 1.5 pounds
    • 1/3 cup garlic, truffle, or regular olive oil
    • 5 garlic cloves, minced
    • 2 tablespoons red wine vinegar
    • 1/3 cup soy sauce or tamari (gluten-free)
    • ¼ cup honey
    • 2 teaspoons freshly ground pepper

    1. On a chopping board, sear the steak against the grain about ¼ inch down. This helps with getting the marinade into the meat.
    2. In a long enough casserole dish to fit the meat flat, mix all ingredients. Place steak in marinate and flip several times to coat the meat with the marinate. Cover and refrigerate for at least 4 hours but no more than 24 hours. Flips steak many times during this time.
    3. Heat the grill to high and place the marinated meat onto the grill. Cook to be rare and for a short time. Remove from grill.
    4. Let stand for 10 after removing from the grill (to prevent toughness). Then cut thin slices against the grain.
