Mellow Mushroom is diverging from their typical ambiance and striking up something new and dazzling, at least in Grant Park.

Set to open this fall at The Boulevard at Grant Park, a luxury apartment community along the Atlanta Beltline, the restaurant will introduce a new look (and operation) that feels almost antithetical to it's existing locations.

Mellow Mushroom in Grant Park will feature an urban restaurant design with hand-painted murals, quick counter service ordering and classic food and beverage items alongside new flavors and surprises available exclusively at this location.

In addition to the known quantities of stone-baked pizzas, munchies and sweets, the Beltline location will also debut “panizzis” – a brand new menu category exclusive to Grant Park featuring hand-held pizza sandwiches.

    • Chicken Pesto Panizzi – Chicken, mozzarella, parmesan, garlic ricotta, roasted tomatoes, pickled peppers, garlic, arugula, pesto & olive oil
    • Steez Steak Panizzi – Steak, mozzarella, provolone, garlic ricotta, spicy pickled peppers, red onions & bell peppers
    • Cosmic Cheese Pizza – A hypnotic twist on the classic cheese pizza made with mozzarella & finished with pesto & vodka sauce swirl
    • Fajita Steak Pizza – Ribeye steak, bell peppers, mozzarella, red onions, pickled jalapeños, pico de gallo, chives & chipotle aioli swirl
    • House Party Pizza – Italian sausage, bacon, ham, pepperoni, bell peppers, red onions, black olives, roasted mushroom trio & mozzarella
    • Green Garden Pizza – A garlic ricotta base topped with roasted mushroom trio, feta, mozzarella, red onions, bell peppers, kale, pickled peppers & finished with a pesto swirl
    • Magic Meatballs – Five beef & chicken meatballs covered in three sauces – red sauce, pesto, & vodka sauce
    • Apple Monkey Bombs – Pull apart dough bites layered with apple compote, caramel icing & cinnamon sprinkles

Behind the bar, the restaurant will be slinging new mocktails and cocktails including the Java Lamp mixed with Tito’s Vodka, cappuccino & chocolate syrup and the Orange Tango Mocktail made with Monin orange syrup, simple syrup, Natalie’s orange juice, Natalie's lemon juice, water & topped with cold foam cream & an orange half wheel garnish.

Set to deliver a new restaurant model that’s unique from existing locations, Mellow Mushroom Grant Park will also be the first to unveil new guest-facing technologies including kiosk ordering, curated music that changes by the hour, day and season, table locator devices and more.

Back-of-house systems are also getting an upgrade with the addition of kitchen display systems for faster service that streamline operations, digital prep predictors to ensure precise preparation, reduce waste and improve efficiency, an all-in-one back office system to streamline inventory, scheduling and reporting and additional business intelligence solutions.

“Behind the scenes, we are committed to operational excellence with state-of-the-art technology and hope to expand this blueprint to other locations in the future,” said Ahsan Jiva, Head of Strategy at Mellow Mushroom.

The Grant Park location will also debut two outdoor, Beltline-facing patios, perfect for al fresco drinking, dining and soaking in city views throughout Atlanta’s extended patio season.

What do you think about the renderings? I'm a sucker for the hippie artistic vibe in the current locations... but maybe this ultramodern look is what the future holds for the pizza maker.

They turn 50 years old this year... can you teach an old dog new tricks? More importantly, should you?
