Betta Gumbo in Windsor was the last Colorado location for the restaurant chain.</p><p>Since then, the restaurant <a href="https://k99.com/betta-gumbo-windsor-closes/">has closed</a> and the building has remained empty. I was on a walk to my favorite coffee shop in Windsor when I discovered that a brand-new restaurant would be coming to the old Betta Gumbo location in <a href="https://95rockfm.com/tags/northern-colorado">Northern Colorado</a>.</p><h2>New Restaurant Coming to Windsor, Colorado</h2><figure><img src="https://img.particlenews.com/image.php?type=thumbnail_580x000&amp;url=29T0E2_0vfA0C0m00" alt="https://img.particlenews.com/image.php?url=29T0E2_0vfA0C0m00" width="1600" height="1067" ><figcaption>Tanner Chambers/TSM</figcaption></figure><p>On my walk to my coffee shop, I noticed very subtle signs. I walk by the old Betta Gumbo location nearly daily and I just noticed the signs.</p><p>The signs say this. "New Taste In Town!! Indian Street Food Opening Soon".</p><p>Now, we have quite a few questions. Is this going to be the name of the restaurant? Or is this simply the style of cuisine that will be coming to Main Street in Windsor?</p><p>Our guess is that it is simply the style of cuisine.</p><h2>Potential Opening Dates in Windsor</h2><figure><img src="https://img.particlenews.com/image.php?type=thumbnail_580x000&amp;url=0GwrGS_0vfA0C0m00" alt="https://img.particlenews.com/image.php?url=0GwrGS_0vfA0C0m00" width="1600" height="1067" ><figcaption>Tanner Chambers/TSM</figcaption></figure><p>There were various signs posted in the windows, however, they did not reveal when Indian street food will be coming to town.</p><p>I took a peak inside and there did not seem to be anything set up. So it might be a while until we have an official opening date. It is great to see that a restaurant is coming to the old Betta Gumbo location and we are excited to try it once it is open.</p><p>We will keep you updated.</p><h2>You Can't Recycle These Things in Colorado</h2><p>Recycling is great for our environment.
