    Basin Bites: The food truck you need to visit

    MIDLAND, Texas (KMID/KPEJ) – This week’s Basin Bites feature is La Patrona Taqueria, a food truck with all the flavor to make this a go-to destination.

    La Patrona is a family-run business with Cindy Beltran, her husband, and her mom, who the truck was named after. Cindy named the food truck after her mom to honor her and her cooking.

    “We decided to honor her with naming it La Patrona Taqueria,” said Beltran. “When she was small she always told me that she always yearned to have her own business. To leave something for her kids and just share it with other people.”

    Everything that you see on the menu, from burritos to tacos to birria dishes and my favorite, the sopes are all Beltran’s mom’s recipes. Now for Cindy herself, she says that she’s been cooking since the age of 12, learning from both her mom and grandma.

    When I asked Cindy why she decided to go into the food business, she explained that she loves to make things that make people happy.

    “The taste is very unique,” said Beltran. “We definitely try to make sure that you remember where you went and that you want to come back.”

    After hearing the backstory of La Patrona, Cindy prepared a few dishes for me, which featured three sopes, one chicken, one birria, and one carne asada. For those that don’t know, sopes are fried masa base that has beans, your choice of meat, lettuce, tomato, and sour cream. Other than the flavor in every bite, what stood out in this dish in particular was that Cindy made the base of the sope by hand.

    The next thing we had were the queso birria tacos, which were to die for, and I would highly recommend to everyone. You can taste how juicy and suave the meat is when you dig in. If you’re a fan of birria, this is your spot.

    To wrap it up, we also had a mulita and asada taco, which you can never go wrong with.

    Overall my experience at La Patrona was one I would recommend to everyone in the Basin because you’re going to get real authentic flavor in every bite, trust me on that.
