    Which food services passed or failed their health inspection: July 28 – Aug. 3

    SYRACUSE, N.Y. (WSYR-TV) — The Onondaga County Health Department released its inspection reports for restaurants checked from July 23 through Aug. 3.

    Which food services passed or failed their health inspection: July 14 – 20

    One food service received an unsatisfactory inspection:

    • Denny’s – 7873 Brewerton Road, Cicero

    Another food service failed their inspection:

    • Ruby Tuesday – 6405 Yorktown Circle, East Syracuse

    This restaurant received nine violations, none of which were in critical condition.

    Food not protected in general: The inspector found several squeeze bottles of product stored in the prep-top portion of the reach-in cooler at the cookline were not labeled with contents.

    Poor sanitary design, construction, installation of equipment and utensils: The inspector found several reach-in coolers in the kitchen and front service line areas with gaskets in poor repair.

    Improper cleaning, washing and sanitizing of equipment and utensils: The inspector found the ice scoop holder near the front soda machine was not clean. The metal pan holding the ice scoop on top of the ice machine was not clean.

    Improper cleaning, washing and sanitizing of equipment and utensils: The inspector found rolling racks, trays, and wire shelving in the walk-in cooler were not clean. The lower shelving throughout the front service area — including garbage storage cabinets — was not clean, with food debris and splashes. The interior of most of the reach-in coolers in the kitchen and the front service area were not clean. The exterior of all the cooking equipment at the cookline was not clean, with grease and food debris accumulation noted.

    Improper sanitary facilities and controls: The inspector found the interior of several floor drains with food debris and buildup, and was not maintained. The interior of two coolers at the cookline and one reach-in cooler at the front service line all had accumulated water on the bottom shelf, not draining correctly.

    The walk-in freezer closest to the cookline had an area of water accumulated on the outside wall, which was being soaked up by a mop head, but running across the floor. Interiors are numerous sinks at the front service line were not clean.

    This violation was found three times.

    Improper construction and maintenance of physical facilities: The inspector found the floor under and around the deep fryers with grease and food debris accumulation. Other areas of the floor at the cookline were not clean in general. The walls in the men’s bathroom were not clean.

    This violation was found two times.

    Ruby Tuesday

    This restaurant had 15 violations, with four in critical condition.

    Improper cooling and refrigerated storage of potentially hazardous foods (critical): The inspector found two lbs. of chicken salad for the buffet line at 70 degrees Fahrenheit in the walk-in cooler. The operator said the salad was prepared that day without using pre-chilled ingredients.

    This was corrected and the chicken salad was discarded.

    Improper cooling and refrigerated storage of potentially hazardous foods (critical): The inspector found at the cook line, three drawer coolers with ambient air temperature between 50 and 52 degrees Fahrenheit. The contents of the drawer coolers were found between 48 and 52 degrees Fahrenheit and stored for an undetermined amount of time. The operator said new products were moved into the unit the day of, during morning preparation.

    This was corrected and the following foods were discarded:

    • Approximately 2 lbs. of beef patty
    • Approximately 4 lbs. of steak product
    • Approximately 2 lbs. of cooked shrimp
    • Approximately 2 lbs. of raw shrimp
    • Approximately 4 lbs. of chicken breast

    This violation was found three times.

    Food not protected in general: The inspector found that within the reach-in portion of the walk-in cooler, containers of food were double-stacked with cellophane and compressed into the lower product.

    Poor sanitary design, construction, installation of equipment and utensils: The inspector found cutting boards near the service station were deeply grooved and stained.

    Poor sanitary design, construction, installation of equipment and utensils: The inspector found gasket material of the door gaskets in the coolers, damaged and torn.

    Improper cleaning, washing and sanitizing of equipment and utensils: The inspector found soda guns boot drains at the bar were clogged. They had accumulated deposits, with a greasy residue on the surfaces near the nozzle.

    Improper cleaning, washing and sanitizing of equipment and utensils: The inspector found gaskets of multiple coolers were not clean and found with food debris.

    The cookline equipment surfaces were not clean and covered in grease and food debris.

    The lower surfaces of the preparation tables had food residues and debris.

    All surfaces in the food preparation area with accumulated food debris and residues.

    Drawer coolers at the cook line had beef and chicken blood on surfaces and steel food containers.

    This violation was found five times.

    Improper construction and maintenance of physical facilities: The inspector found the floors throughout the preparation table area were not clean and covered in grease and food debris.

    The floors in the walk-in cooler were noted with greasy deposits and with food debris, unclean.

    This violation was found two times.

    Many locations passed their inspections between July 28 through August 3.
