A popular Miami Beach delivery and pickup restaurant, AKO Prime, recently made headlines for all the wrong reasons. Following a customer complaint, a state health inspector discovered a series of alarming violations at the establishment, which is located within the Carriage Club North condominium at 5005 Collins Avenue.

The inspection revealed a staggering 54 violations, nine of which were classified as "High Priority," indicating severe concerns for both food safety and sanitation. The issues uncovered paint a troubling picture of the restaurant's adherence to basic health standards, sparking concerns among patrons and local residents.

    Roaches and Sanitation Failures

One of the most significant findings was the presence of roaches in the kitchen area. The inspector reported discovering both live and dead roaches around an unused walk-in cooler and near the dishwashing area. Even more concerning was the roach excrement found in the same vicinity, suggesting a long-standing infestation problem.

In addition to the roach issue, the inspector observed that the restaurant's dishwasher was not properly sanitizing dishes. The chemical line meant to ensure sanitation was found to be improperly connected, resulting in dishes being washed but not sanitized. This issue was compounded by the fact that new employees in the dish area were unable to explain the proper procedure for washing and sanitizing dishes, raising questions about the training and oversight provided by the management.

Mold, Food Storage Issues, and Structural Problems

The inspection also uncovered a “mold-like substance” inside a reach-in freezer, adding to the list of health hazards. The inspector noted that the freezer's interior surface was covered with this substance, posing a potential risk of contamination.

Food storage practices at AKO Prime also came under scrutiny. Packaged beef was found stored under a dripping air conditioner, a clear violation of food safety protocols. Furthermore, frozen salmon was being thawed at room temperature, instead of in a refrigerator, which is a basic food safety rule meant to prevent bacterial growth.

The structural condition of the restaurant was equally troubling. The inspector noted that multiple ceiling tiles were wet, broken, and falling onto preparation tables and cooking utensils. Ceiling paint was peeling in the protein walk-in cooler, and dusty ceiling vents were observed throughout the establishment. Floor tiles were also found to be in disrepair, with food debris accumulating underneath and behind kitchen equipment.

    Response and Reopening

Despite these serious violations, AKO Prime was able to reopen after a follow-up inspection the next day. However, the restaurant still had 32 violations, four of which remained categorized as High Priority.

The restaurant's management has not publicly commented on the inspection findings, leaving many to wonder how these issues will be addressed moving forward. Local residents and patrons are understandably concerned about the health risks posed by these violations, and whether AKO Prime will take the necessary steps to rectify them.
