Here are the food safety inspection reports from Lehigh and Northampton counties, conducted the week of July 14.
Each week, we highlight the inspection reports provided through the Pennsylvania Department of Agriculture. The department performs the inspections in many areas, while some municipalities such as Allentown and Bethlehem conduct their own inspections.
All establishments are inspected once per year, and inspectors may return several more times if the initial inspection is not passed or complaints are received. (For more information on how food safety inspections are conducted in Pennsylvania, view a list of FAQs.)
As noted by the Department of Agriculture, the reports are merely a “snapshot” in time, and they may not be representative of the restaurant’s long-term condition. Many of the violations are corrected on the spot prior to the inspector leaving the establishment.
If a food provider is considered “out of compliance”, that means it has one or more violations that require a return visit by an inspector. The establishment is given time to fix the violations and remains open for business.

- Dishwasher behind the bar using hot water as sanitization only reach 126° F, instead of the required 165° F. Service this piece of equipment.
- The fan guards in the walk-in refrigerator on the first floor have a buildup of debris. Clean and maintain this area.
- Hand sink behind the bar and next to the dishwashing machine did not have single use paper towels at the time of inspection. Ensure paper towels are stocked at all times.

- The hot holding unit was at 80° F. Temperature was adjusted by employee. Ensure food items in the hot holding unit are kept at 135° F or above.
- Observed condensation forming inside of meat display case. Fix condensation issue in this unit to prevent dripping.
- Ceiling tiles are missing in the kitchen area and need to be replaced. Replace missing tiles. –Ice buildup was observed in the walk-in freezer below the condenser. Fix unit and clean ice buildup. Roof is leaking water in the meat department and is in need of repair. Repair water leak. –Water seeping through the wall of the receiving area. Seal this wall. Water was observed dripping from the condenser in produce walk-in cooler. Fix this unit and clean water accumulation.
- Observed debris and harborage behind the refrigerator. Increase cleaning frequency in the area to prevent debris accumulation. –The floor in the back room of the fish department was in need of cleaning. Increase cleaning frequency in the back room of the fish department.
- Mops are not being hung to air dry. Hang mops to dry after each use.

- The chlorine chemical sanitizing solution residual detected in the final rinse cycle of the low temperature sanitizing dishwasher was <10ppm, and not 50-100 ppm as required. Sanitize all items washed in this machine in a compartment of the three compartment sink, using one tablespoon of bleach per gallon of water. Repair the dish machine so that the chlorine residual in the rinse water is 50-100ppm.
- The hot water temperature in the dish washer was only 117° F instead of the required 120° F. Correct this immediately.
