    Those of you who enjoy a savory breakfast option will love this protein packed breakfast scramble recipe. This dish is one that I have been enjoying on repeat recently.

    It is super tasty, it's easy to make, and it comes together in minutes. It tastes great topped with ketchup or hot sauce and served with some avocado toast.

Plus, this veggie scramble is packed with plant based protein thanks to the tofu base. Now, let's go through all of the ingredients you will need to make this veggie breakfast scramble.

    Easy Veggie Tofu ScramblePhoto byAlyssa Atkinson

    Ingredients:

    • 1/2 package extra firm tofu (1 package = 14 oz)
    • 1/4 cup zucchini (finely chopped or thinly sliced)
    • 1/4 cup white mushrooms (thinly sliced)
    • 1 handful of spinach
    • 1 tsp nutritional yeast seasoning
    • 1/4 tsp garlic powder
    • 1/4 tsp onion powder
    • 1/4 tsp paprika
    • 1/4 tsp turmeric

    Directions:

    1. Drain the tofu, crumble it up, and add it to a pan over low to medium heat.
    2. Add a bit of olive oil to the pan along with the chopped/sliced zucchini, sliced mushrooms, and spinach.
    3. Add the nutritional yeast seasoning, garlic powder, onion powder, paprika, and turmeric to the tofu scramble. You can also add salt and pepper to taste if desired for extra flavor.
    4. Use a spatula to mix all of the ingredients in the pan together.
    5. Cook the veggie scramble for about five to ten minutes over low to medium heat until the scramble is fully cooked, the tofu is slightly crispy, and the veggies are soft.
    6. Turn off the heat and transfer the veggie scramble to a plate.
    7. Serve the scramble up with whatever toppings you'd like. I enjoy ketchup on top of my veggie scramble. I also served mine up with some avocado toast for a more filling meal.
