    Avocado Chickpea Sandwich: Easy and Tasty

    Those of you who enjoy a classic sandwich for lunch or dinner are going to love this plant based recipe I'm about to share with all of you. One of my all-time favorite sandwiches is a mashed avocado and chickpea sandwich. So, that's exactly the recipe I'm going to share today.

    You can eat this sandwich hot or cold, depending on your personal preference. I like it both ways, but I usually eat it cold.

    This mashed avocado chickpea sandwich is packed with protein and flavor thanks to the chickpeas, spices, and toppings used. The delicious mixture is smashed between two pieces of bread for the perfect easy lunch option.

    I used some homemade bread for my sandwich, but you can use whichever kind of bread you have on hand or prefer. Of course, I also had to serve my sandwich up with a pickle on the side. Now, let's dive right into this recipe!

    Ingredients:

    • 2 slices of bread (I used homemade bread)
    • 1/2 medium ripe avocado
    • 1/4 cup canned chickpeas (drained and rinsed)
    • 1 tsp yellow mustard
    • 1/2 tsp nutritional yeast seasoning
    • 1/8 tsp garlic powder
    • 1/8 tsp onion powder
    • 1/8 tsp paprika
    • 1/8 tsp turmeric
    • salt & pepper to taste
    • ketchup (for topping)

    Directions:

    1. In a small bowl, mash up the chickpeas and avocado.
    2. Add the yellow mustard, nutritional yeast seasoning, garlic powder, onion powder, paprika, and turmeric.
    3. Mix all ingredients well to combine.
    4. Add salt and pepper to taste.
    5. Spread the avocado chickpea mixture on one piece of bread.
    6. Add some ketchup on top of the avocado chickpea mixture.
    7. Place the other piece of bread on top of the chickpea avocado mixture to form a sandwich.
    8. Cut the sandwich in half.
    9. Dig in! I served my sandwich with a pickle on the side.
