De la Parra oversees the menu development for 27 restaurants in Mexico and 26 Eureka! restaurants in the U.S."It's been super exciting. La Popular is a dream that was starting to build maybe five years ago that we really wanted a very high vibe taquería. A taquería that was a little different than in Mexico City that has fantastic Mexican food. We have everything from ceviches to tacos to main dishes. Eduardo Gomez, CEO of Grupo Carolo, is also CEO of Eureka!
