    “Farm-to-Table” Establishment Replacing Salt and Time

    Radius, a new “farm-to-table” establishment, is soon coming to 1912 East 7th in Austin, replacing the former Salt & Time Butcher Shop and Restaurant.

    Sourcing “all products from trusted Texas farms,” Radius will welcome customers to a carefully designed space (“Chipotle-esque,” as owner Kevin Fishner states on the official website) that will provide local, pastured meat, charcuterie, wild-caught Gulf seafood, produce, and so much more of their “curated selection of the most delicious and nutritious local food.”

    Published floor plans of space reveal there will be dedicated displays for meat, poultry, fish, refrigerated produce, a section for wine, beer and cider, bread, and outdoor patio seating.

    “Eating local, seasonal meat and produce is better for our health, farmers, and the environment. When produce is flown or trucked thousands of miles, they lose nutritional value. Even worse, many fruit and vegetable varieties are grown because they can be transported long distances, not because they’re nutritious or taste good. Reducing the value chain to a local radius leads to more nutritious and delicious food, higher payments to local farmers, and lower carbon emissions,” the official website states.

    No opening date has been announced.
