    Mexican-Japanese Concept to Soon Debut in Town

    According to recent reporting in Eater, an exciting new concept by local culinary stars is soon debuting in Austin. Co-owners of Nixta chef Edgar Rico and Sara Mardanbigi are teaming up with Shion Aikawa, partner and director of operations for Tatsu-ya, to open Jaicaranda.

    The concecpt will focus “on churros with a blend of Japanese and Mexican flavors. Potential options include sansho (aka Japanese pepper) and cinnamon and the cacao dip made with chocolate by small-batch business Hijita. There will also be other non-churro dishes like chicken wings and other appetizers.”

    “The name is a play on Aikawa’s goddaughter’s name, Jai, and the beautiful purple flowering tree, the jacaranda,” Eater reports, adding that the lush tree, prominent throughout Mexico City, was brought there by landscape architect Tatsugoro Matsumoto.
