    Gluten-free bakery The Accidental Baker moving and expanding to Oakhurst

    The owner of The Accidental Baker, a pop-up bakery specializing in gluten-free baked goods at the Metropolitan shopping center , is getting his own kitchen in Oakhurst where he'll be able to produce more gluten-free goods.

    Why it matters: Owner and founder Matt Cabana opened The Accidental Baker at the Metropolitan in March of this year. In less than six months, demand has outpaced supply.


    "I think there's only been two days I didn't sell out," Cabana tells Axios.

    State of play: The new spot will be a micro bakery with counter service and an open kitchen inside Sweet Spot Studio .

    • Cabana, who is leasing the space from Sweet Spot Studio owner Jossie Lukacik, will transform part of the space into his dedicated kitchen.
    • The new spot will open the weekend after Labor Day weekend. August will be Cabana's last month at the Metropolitan.

    "The hard thing about the Metropolitan is when I'm there I just sell what I have," he said. "The good thing about this space is once I start running low on things, I can start baking more things as I need them."

    Catch up quick: Cabana started baking gluten-free goods in his home kitchen for friends and family. With their encouragement, he created a website and Instagram account .

    • His baked goods got so popular that he started baking out of a commercial kitchen to keep up with demand.
    • Three months later he opened at The Metropolitan. He sold out within an hour on opening day.

    Dig in: The Accidental Baker specializes in gluten-free staples like bagels, sourdough loaves and croissants. And he offers seasonal baked goods like cookies, banana breads, and custom cakes and pies.

    What's next: Cabana is expanding his online orders to accommodate demand. Pick-ups will be available Wednesday-Sunday.

    • To start, he'll still have pop-ups and pre-order events. Eventually, you'll be able to walk in and pick out what you want to take home with you, as you can now at the Metropolitan.
