    Foreman Wolf’s new Hampden restaurant, The Duchess, will serve cuisine from Guam in an English pub setting

    Baltimore’s Foreman Wolf restaurant group shared details Monday about the latest addition to its portfolio, a new restaurant planned in Hampden. The Duchess, in the works since 2022 , is slated to open in early fall.

    The restaurant will be “an authentically English-style pub that will feature the culturally rich cuisines of the Mariana Islands,” according to a news release.

    Executive chef Kiko Fejarang will draw from her family roots for a menu that highlights Guam’s Chamorro culture, with cuisine combining Spanish, Japanese, Korean, Filipino and Hawaiian influences.

    A sample menu attached to the restaurant’s liquor license application offers a peek at potential entrees such as fish and chips with fries and yuzu tartar sauce ($38) and a grilled skirt steak with miso butter and soy-pickled shiitake mushrooms ($44). A hot and cold snack menu has options like ahi tuna poke ($25), Chamorro-style crispy shrimp and corn patties ($15), pork lumpia ($13) and “Typhoon fries” topped with furikake, hot pepper aioli, scallions and bonito flakes ($15).

    For dessert, the sample menu shows options like boba panna cotta ($11) and Nutella Turon, a crispy banana stuffed with Nutella and whiskey caramel sauce ($11). It also hints at plans for a brunch with mochi waffles and muffins, strawberry guava pop tarts and “Da Broke Mouth Plate,” featuring spam, garlic fried rice and eggs.

    In a statement, Foreman Wolf CEO Tony Foreman said the “unique and memorable” concept fits Hampden’s “eclectic” vibe and “irresistible personality.”

    “Executive chef Kiko is not only extraordinarily talented in her ability to successfully combine a diversity and complexity of flavors, but she knows and loves Baltimore as much as I do and is eager to share the experiences that influenced and inspired her passion to cook for others,” Foreman said. “The combination of a classic British public house with a Western Pacific-inspired menu reflecting chef Kiko’s rich family traditions is our gift to the Hampden neighborhood and Baltimore.”

    Fejarang, 39, a graduate of the Art Institute of Seattle’s culinary program, has spent much of the past two decades working in Foreman Wolf restaurants. She was a sous chef at Pazo, executive chef at Johnny’s and sous chef at the Milton Inn, acquired by Foreman Wolf in 2021 . She also spent time working for chef Michael Mina’s MINA Group.

    Chamorro food “reflects the best of the seasons and is intended to share,” Fejarang said in a statement. “It’s never pretentious, but always honest, surprising and memorable.  I’m thrilled to now be able to create these rich and wonderful experiences for all of Baltimore.”

    The Duchess will take the place of Cafe Hon at the corner of 36th Street and Roland Avenue and will have the look of a British pub, a spokesperson said. Katie DeStefano of Katie DeStefano Design and Brian Thim of Hall & Co. collaborated on the restaurant’s design.

    The Foreman Wolf restaurant group, founded by Foreman and James Beard-nominated chef Cindy Wolf, also owns Charleston, Petit Louis Bistro and Cinghiale, as well as two retail wine stores.
