Boudin Shack Bringing Cajun Classics to Ascension Parish Location

With his Boudin Shack restaurant in Baton Rouge , owner Jonathan Bodin has dedicated himself to the craft of boudin making, and that dedication is set to pay off with the opening of a second location in Ascension Parish . The new location will be in the Oak Grove Market in Prairieville , located at 38184 LA-42. An opening date is set for mid-August.

Boudin Shack offers its namesake Cajun sausage as links, balls, as well as in wontons and spring rolls. It also has cracklins, crawfish pies, Cajun fries and catfish bites. There is a popular sampler platter with a little bit of everything, and the original Boudin Shack is also known for its party trays, which are popular during football season.

In a recent phone interview with What Now New Orleans , Bodin said he moved to Baton Rouge from his native Krotz Springs about 20 years ago to begin a successful career as an engineer in the oil and gas industry.

“As time went on, I realized there weren’t many places here to stop and quickly grab boudin balls, cracklin, chicken cracklin, or anything like that — any of the Cajun foods,” he said. “There became the idea for Boudin Shack, many years ago and I waited a looong time before I decided to do it.”

Bodin explained that the difference between run-of-the-mill boudin and next-level boudin coms down to quality ingredients, dedication to making a good product, and handling that product so that it’s fresh and presentable.

“If you go into some places around Baton Rouge, the boudin is sitting there wrapped in foil,” he said disappointingly. “If you come into a place like mine, or many of the other ones in the Lafayette area, you can get boudin cut up and put into a bag for you; instead of being wrapped in foil and sitting there for seven or eight hours.”

Bodin added that he aims to have the new location open before the start of football season, and he plans to debut some new offerings. He also said he plans to expand east toward New Orleans at some point.
