    In-N-Out, Burgerville and more: What's new on the local burger scene?

    Whether you like them locally sourced, animal-style or served with a pint, the Portland area burger scene keeps on growing, with a little something for everyone.

    Here’s your update on where to get a burger around town:

    In-N-Out Burger

    Despite a glimmer of progress (or a foreboding look at the future, depending on your stance), In-N-Out Burger has hit another bump in the road in its battle to open a Beaverton restaurant.

    The cult-favorite fast food chain known for its “animal style” burgers and marathon lines is eyeing a spot at the intersection of Southwest Beaverton Hillsdale Highway and Southwest 107th Avenue, near Chick-fil-A.

    Significant progress was made on that plan in April after the Oregon Land Use Board of Appeals remanded a 2022 decision to reject In-N-Out’s application. Less than a month later, the LUBA remand was appealed by a Beaverton resident.

    Now, it’s a waiting game until both parties plead their cases to LUBA during an oral argument that’s currently scheduled to take place July 30. A few weeks after that, LUBA will issue a written decision on the matter.

    But even if In-N-Out wins, a new restaurant won’t open up overnight. Two buildings currently occupy the site where the new restaurant is planned to be built and would need to be demolished before construction can begin.

    There’s also a lengthy list of additional conditions the restaurant will need to meet, including annexation of the site into the city of Beaverton for utility services and the development of a traffic management plan with the Washington County Sheriff’s Office, the Oregon Department of Transportation, the Washington County Department of Land Use & Transportation and the city of Beaverton.

    However, if it does come to fruition, the new burger joint would consist of an almost 4,000 square foot building, a drive-thru, outdoor seating and additional parking. Assuming no other locations open in the meantime, it would be the fifth In-N-Out Burger in Oregon.

    Burgerville

    Burgerville is set to open its first new restaurant in more than eight years next month.

    The new restaurant will open the week of Aug. 5 at 8699 S.W. Robert Burns Drive in Wilsonville.

    Headquartered in Vancouver, Washington, Burgerville was established in 1961 and currently has 39 locations. New locations are planned to open in Salem and Keizer this fall.

    Hops n Drops

    As the area gains one new burger joint, it loses another.

    Hillsboro’s Hops n Drops, located in the Tanasbourne area, announced that it would close its doors for good at 10 p.m. Friday, July 19.

    The sports-bar-style chain, renowned for its signature beers and "drop" cocktails served in icy glasses, first opened its doors in Washington County in 2022.

    Chief Executive Officer Kevin Eggen cited low sales as the primary reason for the closure.

    "We have loved being a part of this community for the past two years. We have made a lot of friends but the sales level is not where it needs to be for us to continue to grow as a company,” Eggen said in a statement.

    Although the doors are shuttering in Tanasbourne, the restaurant won’t be leaving the area for good. According to Eggen, the company will be opening a new location in Hillsboro’s Reed Crossing in spring 2025.

    Three Mugs Brewing

    Hillsboro’s Three Mugs Brewing started pouring taps at its new Beaverton Public House less than a month ago, and has stepped outside of its normal fermented offerings to serve burgers, bratwursts and more.

    Located at 16755 W. Baseline Road, opening the new family-friendly pub took a grueling 18 months of development delays. Originally promising completion by Dec. 1, 2023, the bar had to be repoured multiple times, and the plumbing and electrical inspections weren’t completed until late April 2024 — and that’s not even the half of it.

    But with the pub now open and development in the rearview mirror, Three Mugs is looking forward to serving up delicious food and refreshing drinks.

    “The grand opening was a huge success,” co-owner and brewer Jay Jennings said. “We had a line out the door ordering food and drinks most of the night.”
