    Chuy’s Tex-Mex files permit to open Abilene location

    ABILENE, Texas (KTAB/KRBC) – Chuy’s Tex-Mex has filed a permit to open a location in Abilene.

    Texas Department of Licensing and Regulation shows Chuy’s has started a project to build a new restaurant at 4101 S Clack Street. This is right in front of the Mall of Abilene.

    It will cost an estimated $3 million to construct a full-service, 7,195 sq. ft commercial restaurant at the location, according to the permit.

    Construction is set to begin December 17 and the project should be complete by September 2025.

    Chuy’s opened its first restaurant in Austin, Texas, in 1982. Read their origin story below:

    Chuy’s opened on April 16, 1982 in an old, aban­doned Texas Barbeque joint on iconic Barton Springs Road in Austin, TX. There was seating for about sixty, a women’s restroom the size of a broom closet and a men’s restroom that was, well, outside. Founders Mike Young and John Zapp had a vision of a fun and funky Tex-Mex restau­rant that served authen­tic and fresh food in an atmos­phere that appealed to everyone. From these humble begin­nings Chuy’s was born.
