    Cheesecake with a Cappuccino Swirl

    I was going to write about something pumpkin with coffee, but after I got my pumpkin latte at Starbucks, then saw the multitude of pumpkin cakes, cookies etc. in the grocery store, I changed my mind. There is plenty of pumpkin delights out there, so I'm going to tell you my cappuccino swirl cheesecake that I make. You'll need to prepare ahead of time, either early in the day, or the day before. It's easy and takes only 15 minutes to put together. So give it a try!

    This is what I use:

    2 packages of cream cheese ( 8 oz ea.) If needed, soften it up , unwrapped in your microwave for about 15 seconds each.

    1/2 cup of regular sugar.

    1/2 tsp. vanilla extract.

    2 large eggs.

    1/8 tsp cinnamon.

    2 Tbsp.instant coffee.

    I buy a chocolate crumb crust at the store. Easier than making my own and I'm lazy.

    Prepare your oven at 350 degrees. Beat together, in a large bowl the sugar, cream cheese, and vanilla. Beat unyil well mixed. Add eggs and continue to mix . Take out 1 cup, from the mixture, and put in a smaller bowl and add the cinnamon. Then add the coffee into the original batter. Pour the mixture into the chocolate crust, then spoon the cinnamon mix on top. Swirl with a knife to make it marbalized looking.

    Bake 35 minutesor until center is almost set. Cool on wire rack. Refrigerate at least 3 hours, or overnight, You can decorate the sliced servings with a drizzle of chocolate syrup, if you are creative. It does make a wonderful dessert for guests, or just a weekend surprise for your family. Hint: My grand-daughter doesn't like coffee all that well ( she's young) so extra chocolate sauce goes on her piece.
