A Special Morning Coffee, Like You're in the Islands, with Rum and Coconut!

As you've noticed, I write alot about coffee and creative uses and with different flavors. This is a Weekend Coffee, as it contains a touch of Rum. However, You can use rum extract if you prefer. Pretend you're in the tropics! I can never find decent pictures, so use your creative mind.

Start with 2 cups of milk. Whatever kind you use will be fine.

3- 1/2 oz. of canned flaked coconut. You may have to use bagged coconut. If so, try about 3/4 cup.

2 cups of hot coffee, I use Columbian coffee.

1/4 cup of rum or rum extract.

Garnish with: some whipped cream, some toasted cocont and maybe some sliced almonds?

Over medium- low heat, combine the milk and coconut in a saucepan, heat until is becomes steamy. Stir every now and then. Take the hot milk and coconut mixture and pour it into a blender, and blend on high until smooth. Now pour the milk mixture and the hot coffee, into the same pan ( why dirty another, right?) and heat through, but do not boil. Take the brew off the stove and add the rum, or rum extract. Divide into 4 mugs, and garnish with whipped cream, toasted coconut and maybe a touch of almonds. Truly a delight!
