    As a northener, we don't eat grits.

    We eat oatmeal up north. I never had grits until recently, when my neighbor surprised me the other day. It never fails, she invites me for coffee, almost daily, and she always has some food prepared. Bulgar is another of her breakfast specialties. I learned this recipe from my Ukranian neighbor. (Apparently, they eat grits too). Anyhow, I thought I'd share it with you. It's a bit fancy, but easy to make, and perhaps a weekend breakfast treat. I had her review this for her consent, as well as accuracy. Her recipe was in Russian. Here's the interpretation.

    3 cups of water

    1 teaspoon of salt

    1 cup of quick cooking grits, uncooked.

    1 cup of orange juice

    1/4 c butter

    4 eggs, beaten.

    1 1/2 teaspoon of orange zest

    2 1/4 Tablespoons of packed brown sugar.

    Boil the water and salt together, (3 qt saucepan) Pour in the grits and cook over medium heat, stirring constantly for 3 minutes. Remove from stove. Add in the orange juice, butter, eggs, and zest. Now, grease a 1 1/2 qt. baking dish, and spoon the mixture into the dish. Sprikle with the brown sugar, covering it all. Bake at 350 degrees for 40-45 minutes or until a knife inserted into the middle, comes out clean. Enough for 6 to 8 people. Another good recipe for a B&B setting. This is a good down home comfort breakfast. It's quite tasty!
