    Easy, Delish Fast Casserole for Tomorrow Night!

    I say this because it needs to sit overnight in the refrig. This is real homestyle cooking. Simple to make, then have the older child pop it in the oven, an hour before you plan to eat. Simple ingredients too.

    3 cups of shredded hash brown potatoes. ( Frozen aisle at store)

    3/4 cup of Monteray jack cheese, shredded as well. Buy it shredded, don't waste your time.

    1 cup of cooked ham, perhaps leftover from Sunday dinner? If not just buy a piece of ham to use.

    1/3 cup of chopped green onions. ( I tend to use closer to 1/2 cup).

    4 eggs.

    12-ounce can of evaporated milk.

    1/8 teaspoon of salt and pepper.

    Put the hash browns in an 8x8 inch baking dish. Sprinkle with the cheese, onions and the ham. In a small mixing bowl, beat the eggs, evaporated milk, salt and pepper. Then pour over the top of the casserole, cover and place in the refrigerator overnight.

    Have your older child, if possible, take out of refrig 30 minutes before baking. Then bake, uncovered for 55 minutes to one hour, at 350 degrees, or until a knife inserted in the center, comes out clean. 6 nice sized servings. Add a salad and maybe some warm crusty bread or rolls, as your oven is already hot.
