    Pink Carrot Among First Tenants in New Mass Pike Retail Development

    According to The Boston Globe , a new, “European-style” retail development is making its way to Boston ’s Back Bay , strategically positioned at the bustling intersection of Massachusetts Ave , Boylston St , and Newbury St . This development will sit directly above the Massachusetts Turnpike and promises a diverse mix of amenities, including housing, stores, a hotel, a green space, and a variety of restaurants—many of which have already secured leases.

    Among the eateries joining the “Lyrik” plaza —named for its proximity to Berklee College of Music and the Boston Pops—is fast-casual, health-conscious eatery Pink Carrot .

    Pink Carrot offers an expansive plant-based menu, featuring a plethora of vegetarian, vegan, and gluten-free choices. The eatery’s offerings range from grab-and-go snacks and pastries to smoothies, power bowls, salads, wraps, sandwiches, pizzas, toasts, and a selection of all-day breakfast items. The restaurant also serves an array of freshly squeezed juices, coffees, and teas.

    Established in 2022 by owner JoAnn Bertolino , Pink Carrot’s thriving flagship location is situated in the North End. Having relocated from Florida to Boston, Bertolino noticed a market gap for health-conscious dining options and has since successfully addressed this need with Pink Carrot.

    Although an exact opening date for Pink Carrot’s new location within the Lyrik remains undisclosed for now, the first wave of stores is scheduled to welcome visitors this upcoming fall, in 2024.
