    Eight total violations, with two high-priority violations:

    • High Priority - Operating with an expired Division of Hotels and Restaurants license. Observed the license expired 12/1/2023. The operator renewed the license during the inspection. **Corrected On-Site**
    • High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw bacon stored over deli pastrami in the reach-in cooler at the entrance to the kitchen. The operator properly stored the raw bacon. **Corrected On-Site**

    The following restaurants, listed in alphabetical order, were issued warnings, recommended for administrative complaints or were temporarily closed due to failed inspections June 16-22:

    • High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed approximately five black flying insects in food preparation area. **Warning**
    • High Priority - Raw animal food stored over or with ready-to-eat food in a freezer — not all products commercially packaged. Observed in walk-in cooler beef stored above pie filling. Employee put beef in pan and moved to lower shelf. **Corrected On-Site** **Warning**
    • High Priority - Stop sale issued on time/temperature control for safety food due to temperature abuse. Observed sour cream at 56F, key lime pie 56F, cake 56F in wait staff area. **Warning**
    • High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed sour cream at 56F, key lime pie 56F, cake 56F in wait staff area. **Warning**
    • High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed chlorine sanitizer bucket 200ppm. Employee corrected sanitizer bucket to 50ppm. As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee. **Corrected On-Site** **Repeat Violation** **Warning**

    Eight total violations, with two high-priority violations:

    • High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed in back kitchen area dishwasher (chlorine 000ppm). Person in charge set up three-compartment sink and called for repair. **Corrective Action Taken** **Warning**
    • High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in reach-in cooler on hot food service line: cheese (48F - cold holding.) Person in charge stated it was placed in the reach-in cooler approximately one hour ago. Person in charge removed some of the cheese from the container and placed it in the reach-in cooler. **Corrective Action Taken** **Warning**

    Call back — administrative complaint recommended. Follow-up inspection required.

    Six total violations, with one high-priority violation:

    • High Priority - From follow-up inspection 2024-06-20: Observed in walk-in cooler raw pork over cooked chicken and seafood. Educated person in charge on safe refrigerator storage and emailed person in charge a copy of the handout. Person in charge removed raw pork. **Admin Complaint**
