    Rodent droppings temporarily close Sarasota restaurant, other inspections

    The following restaurants, listed in alphabetical order, were issued warnings, recommended for administrative complaints or were temporarily closed due to failed inspections June 30-July 6:

    Ten total violations, with three high-priority violations:

    • High Priority - In-use utensil stored in unclean water at or above 135 degrees Fahrenheit. Observed utensils in steam table with water at 81F. Spoke to chef about maintaining above 135F.
    • High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed veal 47F and shrimp 49F in reach-in cooler on left side located on cook line across from range. Chef iced product. **Admin Complaint**
    • High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed no vacuum breaker on splitter to hose side.

    Six total violations, with three high-priority violations:

    • High Priority - Ready-to-eat, time/temperature control for safety food marked with a date that exceeds 7 days after opening/preparation. Observed 2 lbs. sliced turkey dated 6/20/24 in walk-in cooler. Chef discarded. **Corrected On-Site** **Warning**
    • High Priority - Stop sale issued due to food not being in a wholesome, sound condition. Observed two lbs. sliced turkey dated 6/20/24 in walki-n cooler. **Warning**
    • High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed soup in walk-in cooler at 49F, fresh mozzarella cheese in reach-in cooler at 46F. Chef iced product. **Warning**

    Nine total violations, with two high-priority violations:

    • High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwasher machine chlorine sanitizer at 000 per million. Operator set up three-compartment sink for sanitizing dishes and equipment with quaternary sanitizer. **Warning**
    • High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed four small flying insects at dish washer area landing on garbage and soiled dishes. **Warning**

    • High Priority - Container of medicine improperly stored. Observed a medical kit stored next to pasta in the back storage area. Operator removed the medical kit. **Corrected On-Site** **Warning**
    • High Priority - Rodent activity present as evidenced by rodent droppings found. Observed approximately four rodent droppings on single-service items, with approximately 20 rodent droppings on the floor below them in the back dry storage area. The back dry storage area is approximately 20 feet from the food prep area and has no food product in it. Operator disposed of the single-service items and cleaned and mopped the area. As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee. **Corrective Action Taken** **Repeat Violation** **Warning**
    • High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed on the left reach-in cooler: meatballs (48F - cold holding); chicken (47F - cold holding). Observed the food above the fill line. Operator stated they had been out for approximately one hour. Operator placed the items in walk-in cooler. **Corrective Action Taken** **Warning**
    • High Priority - Warewashing sanitizing solution exceeding the maximum concentration allowed. Observed the bar triple sink at 400ppm quaternary. Operator dumped the sink and retested at 200ppm. **Corrected On-Site** **Warning**

    • High Priority - Raw animal food stored over or with unwashed produce. Observed raw beef stored over uncut potatoes in a standing reach-in cooler. Operator removed the beef.     • High Priority - Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Observed raw shell eggs stored in a reach-in cooler: ambient shell eggs (60F - cold holding). Operator stated they had been there for three hours. Operator placed eggs in a working reach-in cooler. As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee. **Corrective Action Taken** **Repeat Violation** **Admin Complaint**
    • High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed on the cook line: chopped lettuce (46F - cold holding). Stored over the fill line. Operator stated it had been there for one hour. Operator took the top half of the container and placed it in a reach-in cooler. **Corrective Action Taken**
    • High Priority - Toxic substance/chemical improperly stored. Observed batteries and hand sanitizer stored above food in the dry storage area. Operator removed the items. **Corrected On-Site**
    • High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Observed the mop sink with a splitter and no vacuum breaker.
