New Korean restaurant to open in Brighton

Korean restaurant Seoul Drop opens Monday in Brighton's Lac de Ville Plaza at 1900 S. Clinton Ave.

Dishes include rice bowls, kimbap (rice and seaweed roll), tofu pockets and ramen.

“Our menu also boasts a variety of beloved Korean desserts made in house,” said manager Josh Hwang, whose family owns the business.

Offerings include bingsu (a milk-based shaved ice dessert with sweet toppings), Fun Cat pudding (jiggly cat-shaped panna cotta) and Basque cheesecake (a crustless variety), as well as tiramisu in such flavors as strawberry, blueberry and black sesame.

The drink menu features specialty coffees, including strawberry matcha latte, and sparkling water-based fruit drinks.

The restaurant also is focused on affordability, Hwang said. Entrées start at around $7, and items on a small-bites menu are priced $4 to $7. Seoul Drop is self-serve, so there’s no tipping.

Hours are 10 a.m. to 9 p.m. Monday through Saturday. A ribbon-cutting is set for 11:30 a.m. on July 1.
