Parlour Bar and its smash burger is headed to Excelsior

The famed double-patty smash burger on the menu at Parlour, born in the restaurant’s original Minneapolis cocktail bar and since well established as one of the Twin Cities’ most-loved burgers, is coming soon to Excelsior.

Restaurant group Jester Concepts, which is behind Parlour, Borough, Butcher & the Bar, Char Bar, P.S. Steak and Starling, on Monday announced plans to open Parlour Bar in the basement of 200 Water Street this fall.

The group is also preparing to launch two new concepts on the building’s main-level later this year, according to the announcement. The design of all three concepts is being led by Minneapolis-based Studio Grey.

The takeover of the prominent Water Street space, which formerly housed Bull & Wren and Jake O’Connor’s before that, marks a significant westward expansion for Jester Concepts, which first stepped into the suburbs earlier this year with the opening of Starling in Edina.

“Excelsior is beautiful and has a vibrant community poised for continued culinary growth,” Brent Frederick, owner of Jester Concepts, shared. “We’re excited to be at the forefront of this as we continue Jester’s westward expansion.”

Parlour Bar’s 1,200-square-foot, 60-seat space will feature a dimly-lit bar and a mix of seating at wooden tables and plush banquettes, according to Jester Concepts.

The menu will feature signature favorites such as the popcorn for starters, which is made with togarashi, bacon and pineapple.

And, of course, the Parlour burger will be on the menu, featuring two patties made with a blend of chuck, ribeye and brisket, topped with white American cheese and served on a toasted egg bun.

The cocktail menu is being designed in collaboration with Earl Giles.
