I've gathered together some of my favorites, the ones I make over and over again. Whether it's mixed with hashbrowns, spinach or Tex-Mex seasoning, using a rotisserie will save you time without sacrificing flavor. So grab a rotisserie chicken and see what you've got in your pantry.
Of course, you don't have to use a rotisserie chicken, you could roast your own chicken in the oven, or use an instant pot, either way it will take an extra 30 minutes.

Here are three of my all time favorite recipes that can be made with Rotisserie Chicken. These are the ones that are on my regular rotation.

This Cheesy Spinach and Chicken Mac is less like a traditional mac and cheese and more like a casserole. It’s one of my favorite comfort foods to make. It’s just as delicious the next day as all the flavors mingle and meld together, or you can make it in advance and keep it in the freezer for days you don’t feel like cooking.
This chicken enchilada casserole recipe is one of my favorites for Taco Tuesdays or family dinners, mostly because it’s so yummy, but also because it’s really easy to make. It’s a 45-minute casserole (30 minutes is just oven baking time).
