    We all know the weeknight dinner scramble is real. Between work, errands, and everything in between, who has time to whip up something amazing every single night? That's where a trusty rotisserie chicken comes in—it’s your ready-to-go solution for easy, delicious meals. Just shred it up and add it to your favorite dishes for a quick fix that will save you time.

    I've gathered together some of my favorites, the ones I make over and over again. Whether it's mixed with hashbrowns, spinach or Tex-Mex seasoning, using a rotisserie will save you time without sacrificing flavor. So grab a rotisserie chicken and see what you've got in your pantry.

    Of course, you don't have to use a rotisserie chicken, you could roast your own chicken in the oven, or use an instant pot, either way it will take an extra 30 minutes.

    Here are three of my all time favorite recipes that can be made with Rotisserie Chicken. These are the ones that are on my regular rotation.

    Cozy Chicken Hashbrown Casserole with Cornflakes

    Creamy, loaded with cheese, and chunks of tender chicken, this Chicken Hashbrown Casserole is baked to golden perfection in just 40 minutes and is just as delicious for breakfast as it is for dinner.

    Here's what you'll need:

    • ▢3 cups shredded cooked chicken
    • ▢30 oz frozen hash browns thawed
    • ▢½ cup butter melted
    • ▢¼ cup green onions chopped
    • ▢2 cups cheddar cheese shredded
    • ▢2 tablespoons butter
    • ▢2 tablespoons flour
    • ▢1 cup milk warmed
    • ▢¼ teaspoon garlic powder
    • ▢¼ teaspoon onion powder
    • ▢¼ teaspoon celery salt
    • ▢1 teaspoon salt
    • ▢½ teaspoon pepper
    • ▢2 cups sour cream

    TOPPING

    • ▢4 cups Corn Flakes
    • ▢½ cup butter melted
    • ▢½ teaspoon salt

    Creamy, Cheesy Spinach and Chicken Mac

    This Cheesy Spinach and Chicken Mac is less like a traditional mac and cheese and more like a casserole. It’s one of my favorite comfort foods to make. It’s just as delicious the next day as all the flavors mingle and meld together, or you can make it in advance and keep it in the freezer for days you don’t feel like cooking.

    Here's what you'll need:

    • ▢8 ounces penne pasta
    • ▢2 tablespoons olive oil divided
    • ▢2 tablespoons butter
    • ▢1 yellow onion diced
    • ▢3 cloves garlic minced
    • ▢2 cups milk
    • ▢2 cups heavy cream
    • ▢2 cups sharp cheddar cheese shredded
    • ▢½ cup parmesan cheese grated
    • ▢2 teaspoons salt
    • ▢1 teaspoon pepper
    • ▢2 tablespoons hot sauce
    • ▢3 ½ cups shredded chicken
    • ▢8 ounches fresh spinach stems removed

    Chicken Enchilada Layered Casserole (Easy Homemade Sauce)

    This chicken enchilada casserole recipe is one of my favorites for Taco Tuesdays or family dinners, mostly because it’s so yummy, but also because it’s really easy to make. It’s a 45-minute casserole (30 minutes is just oven baking time).

    Sauce

    • ▢1 medium onion finely chopped
    • ▢1 ½ teaspoon chili powder

    • ▢1 teaspoon coriander
    • ▢1 teaspoon sugar
    • ▢½ teaspoon salt
    • ▢1 tablespoon flour
    • ▢2 cloves garlic minced
    • ▢1 cup chicken broth
    • ▢15 ounce tomato sauce

    Casserole

    • ▢3 cups chicken shredded, about 2 chicken breasts
    • ▢4.5 ounce green chiles canned
    • ▢8 corn tortillas 6-inch
    • ▢3 cups pepper jack cheese or colby jack, shredded
