    West Virginia Distillery Unveils Ambrosia, a New Liquor Made from Maple Sap

    In a pioneering move, MannCave Distilling, based outside Clarksburg, West Virginia, has introduced a novel type of liquor crafted from maple sap.

    This innovative spirit, which has been named ambrosia, was conceived following a discussion with Spruce Knob Maple representatives at a trade fair. Stephen Mann, the director of MannCave Distilling, spearheaded the project, resulting in the creation of this 110 proof liquor.

    The development process presented unique challenges, as explained by Eric Mann, the chief distiller. The fermentation process for ambrosia is distinct, requiring more time compared to their other products like rum and corn-based spirits. Ambrosia's flavor profile has intrigued customers, with many describing it as reminiscent of an American breakfast, evoking tastes like caramel and butterscotch but without the expected sweetness.

    The MannCave Distillery, established by Stephen Mann in 2017 using water from a former coal mine, has previously garnered acclaim for its moonshine, whisky, and vodka. However, the creation of a maple-based liquor has been a distinct endeavor, involving patience and a longer production timeline.

    The distillery is now facing a bottleneck in production due to limited maple sap stocks, with only about 60 cases remaining. They are eagerly awaiting more maple sap deliveries to ramp up production. The company is also advocating for legislative action to formally recognize and categorize their unique product, with a proposed definition requiring at least 51% maple sap composition for a spirit to be labeled as Ambrosia.

    While the regulatory and market response to this innovative liquor remains to be seen, MannCave Distillers has certainly introduced a unique product to the spirits industry, potentially paving the way for a new category in liquor.
