    Wedgewood Cheese Bar to Open Fall 2024 in Carrboro

    Entrepreneurs Michelle and Stevie Lee Webb , known for their successful venture, The Cheese Shop, are set to open Wedgewood Cheese Bar in fall 2024.

    Located in the historic Carolina Car Wash building, the new establishment promises to bring a unique dining experience to the area.

    Michelle and Stevie launched The Cheese Shop in 2022 inside Glasshalfull’s wine shop at 100 Brewer Lane. Their 80-square-foot shop quickly became a local favorite, offering a curated selection of cheeses and charcuterie. Now, they are expanding their vision with Wedgewood Cheese Bar, which will transform the small shop into a 2000-square-foot cheese bar and restaurant.

    Wedgewood will feature a 15-seat cheese bar, an 18-foot cheese case, and a mezzanine full of dining tables. The menu will include small plates made with local produce and a variety of meats and cheeses from around the globe. Sommelier Paula de Pano of Rocks + Acid Wine Shop will curate the wine list, ensuring perfect pairings with the fare.

    The Webbs aim to create “an atmosphere of modern European wine bar meets kindred Carolina neighborhood joint.” To bring their vision to life, they teamed up with Sundholm Studio to redesign the vacant space into a stylish and welcoming venue.

    Michelle Webb brings nearly 20 years of experience in marketing and public relations to her role. Despite being relatively new to the food and beverage industry, her strong background in event planning and a keen sense of flavor have contributed to the success of The Cheese Shop. Michelle oversees the day-to-day operations and growth of the business, while also contributing to menu development whenever possible. She brings the communications rigor of her agency life to her small business in Carrboro.

    Stevie Webb, a trained chef and dual citizen of the US and UK, relocated to the States in 2006 from London. His diverse career path includes time as a talk radio producer and nearly a decade in emergency medicine as a 911 and critical care paramedic in New York City. Seeking a break from the high-stress environment, Stevie became a cheesemonger at The Greene Grape in Brooklyn, where he developed a deep knowledge of fine cheeses and provisions. His culinary training at London’s prestigious Leith’s School of Food and Wine further honed his expertise.

    Together, Michelle and Stevie Webb have built an innovative cheese shop business model that extends across retail, B2B, and an award-winning, pop-up, six-course cheese and wine dinner concept. With Wedgewood Cheese Bar, they aim to continue their success by offering a new and delightful dining experience to the Carrboro community.
