Pennsylvania is known for its rich agricultural heritage, making it a perfect home for this gourmet twist on a classic grilled cheese sandwich. Imagine a gooey, golden-crisp sandwich stuffed with flavorful gouda, earthy roasted mushrooms, and sweet caramelized onions. This combination offers a delightful balance of textures and flavors, showcasing the best local produce and dairy that Pennsylvania has to offer.

The key to this recipe lies in the layering. Start with Pennsylvania's artisan sourdough bread, which toasts beautifully, becoming the crunchy exterior that complements the creamy melted gouda inside. Roasted mushrooms and onions provide an earthy sweetness that takes this sandwich to a new level, making it a delightful choice for lunch or dinner.

Recipe: Grilled Cheese with Gouda, Roasted Mushrooms, and Onions

    Ingredients:

    • 8 ounces mushrooms, sliced
    • 1 medium sweet onion, sliced
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • 4 tablespoons butter
    • 4 slices artisan sourdough bread
    • 1 cup gouda, shredded (preferably smoked for an extra kick)

    Instructions:

    1. Preheat the oven to 400°F. Toss sliced mushrooms and onions with olive oil, salt, and pepper. Roast on a baking sheet for about 20 minutes, stirring halfway through, until the vegetables are soft and slightly caramelized.
    2. In a skillet, melt butter over medium heat. Assemble the sandwiches by layering gouda, roasted mushrooms, and onions between two slices of bread.
    3. Gently press the sandwiches together and cook them in the buttered skillet for 2-3 minutes on each side, until golden brown and the cheese is melted.
    4. Serve hot with a side of tomato soup or a fresh salad for a complete meal.

This recipe is perfect for enjoying the flavors of Pennsylvania’s fresh produce and artisan cheeses. The blend of sweet onions and mushrooms with the smoky gouda creates a truly comforting meal, whether you're enjoying a quiet evening at home or hosting friends for a cozy gathering.

Oh yeah! Try it with fried onions, apples and raisins. Had that in a restaurant many years ago and was hooked. Also great with muenster cheese.
