Skin on or off however you prefer them then serve them up with all the toppings you desire but they sure are great the way they are. Our family loves sour cream, shredded cheddar, and bacon.

What kind of potatoes are the best?

I find Russet potatoes to be the best or Red skinned potatoes for flavor. The biggest difference is the texture and grittiness in my opinion. Some of the others stay soft and never get crispy edges.

For the best results for crispiness broil the potatoes on high until desired crispness after boiling instead of baking.

Shopping List for Potatoes

• 4 tablespoons mayonnaise
• 2 cloves garlic, crushed or use granulated garlic powder around 2 teaspoons
• 2 teaspoons dried oregano or a mixed Italian herb seasoning
• salt and pepper to taste
• 5 large potatoes cubed or wedges (skins on or off)

Directions:

1. This is not a dipping sauce it's cooked on the potatoes.
2. First, cut and boil the potatoes in salt water for around 11 to 12 minutes.
3. Drain.
4. Note: do not overcook them or they will break however if you did just spoon the mixture onto the potatoes instead of mixing them.
5. Mix everything and spread the covered potatoes on a baking sheet that is oil-sprayed or lined with parchment paper.
6. Broil on high or Bake at 450 degrees until lightly browned and the edges get toasted.
7. Serve with sour cream, shredded cheddar, and bacon bits.
