    Vintage Lemon Lime Soda Cake

    This is one of the moistest most flavorful cakes to make, a very old recipe that has always been my favorite.

    Served glazed with lemon icing, plain or with powdered sugar dusting on top, this one is the perfect cake mix cake especially if you're not fond of baking.

    The cake can also be served in slices topped with assorted fruits and whipped cream when hosting a party.

    Shopping List:

    • 1 box yellow or white cake mix (15.25 ounce box)
    • 1 small box of instant lemon pudding mix
    • 4 large eggs
    • 3/4 cup vegetable oil
    • 3/4 cup lemon-lime soda any brand
    • Glaze:
    • 1 cup powdered sugar
    • 1 tablespoon water or milk
    • 1 tablespoon freshly squeezed lemon juice

    Directions:

    1. Preheat the oven to 325 degrees and heavily grease a bundt pan.
    2. Note: you can use another pan but the cooking time will vary. Use the toothpick method to check that the thickest part of the cake is done baking.
    3. Pour the cake mix and box of instant pudding mix into a large mixing bowl
    4. Beat in the eggs, then add the vegetable oil.
    5. Stir in the lemon-lime soda and stir to combine evenly.
    6. Pour the batter into the prepared greased bundt pan.
    7. Bake at 325 degrees for 40-45 minutes.
    8. Cool and invert onto a serving dish.
    9. Mix the glaze in a small bowl and pour over the top of the cake.
