    A Taste of the Tropics Fruit Relish

    This relish is terrific for topping grilled seafood or as a dip.

    A delicious combination of fruits diced and spicy with an array of colors.

    Spicy jalapeno peppers and vine-ripe tomatoes blended with melon are the perfect topping for sweet BBQ ribs and so much more.

    Easy to make in minutes and served as is with chips it's a summer delightful treat!

    If you're not a fan of melon, try using all diced pineapple, mango, peaches, or any other fruits you prefer, a medley is delicious over grilled salmon as a salsa topping.

    Fruit Relish with Peppers:

    • 1 cup of green or orange melon diced
    • 1 cup avocado diced
    • 1 cup mango diced
    • 1 large rosa plum tomato, diced
    • 1 cup of mixed colors of red, green, and yellow pepper, finely chopped
    • 1/2 of a red onion, finely chopped
    • 1 jalapeño, finely chopped after removing seeds


    Dressing:

    • 2 tablespoons olive oil
    • 1 fresh lime juiced
    • salt and pepper to taste
    • Optional: fresh mint for garnishing on top

    Directions:

    1. Whisk together the olive oil, and lime juice with salt and pepper set aside.
    2. Place all the other ingredients in a serving bowl.
    3. Pour the dressing and toss together.
    4. Serve with suggestions below.

    Serving ideas:

    1. tortilla chips or another chip for dipping
    2. seafood topping
    3. bbq pork ribs topping
    4. burger topping
