    Moist & Easy Apple Cake Recipe

    This is an all-made-from-scratch cake however this is made with simple pantry ingredients and perfect for beginners who love homemade cakes!

    The cake is moist and chuck full of apples, and the best part is it requires nothing but a spatula to mix it with. One bowl is delicious and easy to make.

    We prefer to use tart-style apples, and the firmer apples do not soften. I listed a few kinds you can try or use whatever you prefer. This is a cake we grew up on in Central, New York where the neighborhood always had an overabundance of apples from the trees in their yards. We had bushels every year at the end of summer.

    The cake can be made in a loaf pan, into muffins, and in a sheet pan, just the baking times will vary and need adjusting.

    Shopping List:

    • 2 eggs
    • 1 3/4 cups granulated sugar
    • 2 1/2 teaspoons ground cinnamon
    • 1/2 cup oil
    • 6 medium McIntosh, Cortland, or Grannie Smith apples cored and sliced or diced with skins removed
    • 2 cups all-purpose flour
    • 2 teaspoons baking soda
    • Tools:
    • Mixing bowl
    • Spatula
    • Parchment paper
    • One large square pan, two 9-inch round pans, a loaf pan or muffin pan


    Directions:

    1. Preheat oven to 350 degrees and line your pan with parchment paper or grease it.
    2. Mix the eggs, sugar, cinnamon, and oil in a large bowl.
    3. Place the apples in the bowl and toss with a spatula to coat them all together.
    4. Add the baking soda and flour and stir into the apple mixture mixing with a fork until all the white from flour is gone.
    5. Pour mixture into greased pan of choice ( you can also make muffins).
    6. Bake for approximately 55 minutes for a square larger cake.
    7. Allow less time for muffins and smaller cakes.
    8. Use the toothpick method in the center of the cake to test doneness.
