    One-Pot Beef & Rice Skillet: Quick, Tasty, and Kid-Friendly

    I could never have enough quick recipes to make with a busy lifestyle. Fussy kids even like this one. Ground beef a little tomato sauce, and cooked rice make a tasty skillet everyone will love. We add the cheese on the side, the kids like shredded cheddar, and the rest like shredded provolone when served.

    Additions are wonderful so don't just stop at rice, black beans, pinto beans, and chickpeas are all great additions, or even peas if the family likes them!

    Beef and Rice Skillet Ingredients

    • 1 tablespoon olive oil
    • 1 pound of ground beef, ground turkey, or ground chicken
    • 1 medium onion, chopped
    • 1 green bell pepper, chopped
    • 2 cloves garlic, minced
    • salt, and black pepper to taste
    • 1 small 15 or 16-ounce can of diced tomatoes or fire-roasted with oregano, basil, and garlic in it
    • 1 1/2 cups beef stock
    • 1 cup uncooked white long-grain rice
    • 2 tablespoons tomato paste
    • 1 1/2 teaspoons Worcestershire sauce
    • 1 cup shredded cheese blend (usually a blend of Cheddar, Jack, and Colby is what I use)
    • 3 teaspoons of dried or freshly chopped fresh parsley (optional)
    • OptionalL 1 cup of (canned and drained) any of these: peas, corn, black beans, pinto beans or green beans

    Directions:

    1. Saute the beef in a skillet with oil over medium heat until browned.
    2. Add the onion, pepper garlic, salt, and pepper.
    3. The meat should be loose and broken up.
    4. Saute around 4 minutes until the vegetables are softened.
    5. Stir in the tomatoes with their juice, stock, rice, tomato paste, and Worcestershire.
    6. Bring to a rolling boil over high heat then reduce to a low simmer covered and cook until the rice is soft around 25 minutes.
    7. Fluff it up with a spoon.
    8. Sprinkle on the cheese.
    9. Cover and let stand until the cheese melts, about 2 minutes
