    Quick Pot Pie for a Busy Schedule

    During the week I seem to run out of time between kids, school functions, and work! I still want to have a filling hearty meal but sometimes I need some delicious ideas that take shortcuts, which is my go-to recipe!

    Everyone in our family enjoys pot pies, but making it from scratch can be tedious and time-consuming. This recipe isn't at all because it's semi-homemade!

    Any meats and vegetables your family enjoys can be used although leftover turkey and chicken off the bone are the two favorites.

    If you keep some of these quick ingredients on hand, you can whip up this pie in less than 30 minutes.

    Frozen grilled chicken or leftovers from another meal are the very start to a delicious repurposed meal!

    Bottled gravy, frozen or refrigerated pie crusts and frozen or canned vegetables are the tops to keep on hand.

    We always seem to have some kind of meat leftover and then another kind of pot pie is created. Enjoy!!

    Shopping List:

    • 2 cups leftover chicken or turkey ( of course you can use leftover pork, beef, lamb, and venison also)
    • 2 cups of mixed frozen vegetables or (I add peas, carrots frozen, and 1 potato microwaved in small cubed for 6 minutes in water, sometimes I add steamed leftover broccoli and mushrooms also)
    • 1- 12 ounces jar of chicken or turkey gravy ( or one to coordinate with the meat)
    • 1 box refrigerated store-bought pie crust (or use a frozen two crusts per package)
    • Optional: 3 tablespoons white wine or Marsala wine


    Directions:

    1. Preheat the oven to 400 degrees.
    2. Oil spray a casserole dish ( any size that fits the pie dough).
    3. Place one sheet on the bottom of the casserole dish and cut to fit if necessary.
    4. Add the vegetables to a large bowl, the meat you're using, gravy, (and wine if using), and gently mix this.
    5. Pour the mixture into the prepared casserole dish then top with another crust.
    6. Pierce holes on top with fork times.
    7. Crimp the edges with the fork all around the pie.
    8. Oil spray the top with cooking butter spray oil.
    9. Note: you can brush the top with egg if you like a shiny pie, and add dried herbs and granulated garlic powder on top.
    10. Bake in a preheated oven of 400 degrees until the top is browned, around 25 minutes, or longer for a crispy crunchy crust.
