    Loaded Chicken-Broccoli Stuffed Potatoes

    Here is a meal in itself using baked potatoes. These are stuffed with chicken, broccoli, and lots of extra sharp cheddar cheese melted on top. Somewhere under the cheese is crispy bacon! These spuds are dressed to the nines and deliciously served with any meal or perfect for a complete brunch meal.

    If you love twice-baked potatoes, these will be your new favorite go-to recipe. Everyone will rave about them and of course, if you're not a broccoli fan switch it up to another vegetable you prefer because everything goes great with melted cheese on top.

    Shopping List:

    • 2 medium to large russet potatoes
    • 1/2 tablespoon extra virgin olive oil
    • sea salt and pepper to taste
    • 2-4 tablespoons good quality butter
    • 1/2 cup diced or shredded rotisserie-cooked chicken
    • 1/2 cup steamed broccoli florets
    • 1 slice bacon, cooked until crispy and chopped
    • half and half or milk
    • 1 teaspoon granulated garlic powder
    • sharp shredded cheddar cheese around 1 cup

    Directions:

    1. Scrub the potatoes and microwave them for 9 minutes.
    2. Cool slice lengthwise.
    3. Scoop out the potatoes into a bowl and add the salt, pepper to taste butter and 3 tablespoons of milk or half and half.
    4. Fold in the chicken.
    5. Stuffed potato jackets.
    6. Top with broccoli first, cheese, and then crumbled cooked bacon.
    7. Brush the jackets with olive oil.
    8. Bake for 15 minutes until cheese melts.

    1. fresh herbs on top are terrific adding some chopped basil, rosemary, and thyme, you can also add some red pepper flakes or chili powder on top
    2. leftover chili
    3. your favorite pizza toppings
    4. taco meat and cheese salsa, avocado or guacamole
    5. shredded barbecued pork or pulled shredded bourbon chicken
    6. leftover boneless buffalo chicken tenders chopped with blue cheese and shredded cheddar cheese
    7. caprese style with chopped tomatoes, basil and mozzarella
    8. BLT dip topping or Coleslaw topping
    9. chicken parmesan bites
    10. Philadelphia cheese steak filling
    11. lemon chicken
    12. Guinness Corned Beef
    13. shredded Dubliner cheese or Beer cheese
    14. boiled or fried cabbage
