    Grilled, Air-fried or Baked Citrusy Lime Chicken

    Here is a grilled chicken recipe we just can't get enough of. Some folks may not like it charred so you can cook this on lower heat if it isn't prepared the way you prefer. I have many comments and complaints that the chicken is burnt but this is grilled to perfection for our family.

    During the warm weather months, this marinated chicken has the best flavors and brings summer alive straight through the last minute with its citrusy lime flavor.

    This chicken recipe can be baked, air fried, or grilled just make sure the internal temperature is 165 degrees and the juice runs clear once it's completely cooked correctly and safely ready to eat. Wait at least 5 minutes before serving this and leftovers are fantastic for making chicken salad or a sandwich with lettuce and tomato on top!

    Shopping List:

    • 6 chicken legs or 8 thighs, any kind of boneless meats or seafood around 1 pound
    • 2 tablespoons of parsley
    • 5 garlic cloves, peeled
    • 1 shallot, roughly chopped
    • dash cayenne pepper
    • 1/4 teaspoon chili powder
    • 1/3 cup fresh lime juice
    • 1/4 cup extra virgin olive oil
    • salt and pepper to taste freshly ground black pepper

    Directions:

    1. Marinate the chicken in a ziplock bag overnight, turning occasionally to coat ( or at least 4 hours).
    2. Heat the grill medium-high.
    3. Remove chicken from marinade, discard leftover marinade. Make sure the chicken is dry by using some clean paper towels to blot any moisture.
    4. Season the chicken pieces with additional salt and pepper to taste on both sides.
    5. Place the chicken on the grill ( bake or fry until juices run clear) and cook for 10 minutes on the first side.
    6. Turn and cook an additional 10 minutes or till juices run clear.
    7. Turn chicken, (as needed to keep from burning and to get nicely formed grill marks until chicken is cooked through and tender) for about 30 minutes total for thighs and legs and 40 minutes for chicken leg quarters.
    8. Remove chicken from the grill and let stand for 5 minutes before serving.
    9. Garnish chicken with fresh parsley and drizzle with squeezed fresh lime wedges before serving.

    Other Cooking Methods:

    • Baking: 400 degrees for around 45 minutes or until the internal temperature reaches 165 degrees using an instant-read thermometer.
    • Air frying: Air fry at 400 degrees F for 10 minutes. Flip them over, then cook for another 8 minutes. Let rest for 5 minutes,
