    Quick and Easy One Pan Breakfast Casserole

    All-in-one pan casseroles are easy and the best especially around the weekends and holidays. Everything cooks in one pan with your family favorites. Anything your family prefers from meats to vegetables can go into your casserole. Cooked meat, shredded potatoes, and vegetables of your choice can all be added for a one-pan breakfast meal. There is a list of substitutions below and additions to mix and match to try. If you would like to leave this casserole with just cheese and potatoes, that's fine for picky eaters. Set up a serving bar with the fix-ins and let them build their own plates.

    Shopping List:

    • 1 package of 10 buttermilk or enough to thinly line an oil-sprayed baking casserole (13 x9, large round, or use two 9 x 9 and freeze one)
    • 4 eggs beaten
    • 1 cup milk or half-and-half cheese
    • 1 1/2 cups shredded off the block of a good melting cheese (Swiss, Cheddar, Provolone or cheese you prefer)
    • 1/2 cup chopped meats of choice see list below
    • 1 cup shredded hash browns or tater tots thawed( I use the browned version)

    Directions:

    1. Roll out the dough into a rectangular form.
    2. Pre-bake dough for 5 minutes at 350 degrees until set not browned.
    3. Beat the ingredients together.
    4. Add the cheese.
    5. Pour your egg mixture over the top of the dough.
    6. Any other additions can go on top (cooked meats, potatoes etc.)
    7. Sprinkle with more cheese if choice and bake at 400 degrees until brown.

    Toppings and Additions:

    • cooked breakfast sausage
    • crispy bacon
    • cooked ham (deli meats)
    • cooked steak
    • mushrooms
    • peppers
    • onions
    • diced tomatoes
    • hash browns or tater tots thawed
