    Speedy Chicken & Biscuit Dumplings: Easy, Comforting, & Delicious

    If you love easy recipes and chicken with dumplings, this is not only an easy recipe but one of the best bowls of comfort food. With the cooler weather coming, this is one of those meals that warms you up. If you're a busy household, try using a rotisserie chicken off the bone for weekend nights and meld all the flavors together with the ingredients below, top with the baking mix and viola, quick and easy. The kids and young at heart will love this recipe.

    Shopping List:

    • 5 cups of chicken broth
    • 4 skinless, boneless chicken breast halves, cubed ( you can also use rotisserie chicken off the bone)
    • 1 onion, minced
    • ½ pound diced carrots
    • 2 stalks celery, finely chopped
    • 3 cloves of minced garlic chopped fine
    • ground black pepper and salt to taste
    • 2 tablespoons butter

    Dumpling Batter:

    • 2 1/4 cups baking mix (premix for making biscuits in a box)
    • 2/3 cup milk

    Directions:

    1. In a 5 quart saucepan, melt the butter and saute the garlic, onion carrots, and celery stirring constantly for 3 minutes.
    2. Add all the ingredients, including the chicken, and simmer for around 30 minutes or until the chicken is completely white and no pink remains.
    3. Mix the milk with baking mix until a dough forms.
    4. Drop an ice cream soup dumpling ball on top of the hot mixture, and cover for 10 minutes to cook in the juices.
    5. Spoon into a bowl.
