A slice of this easy coffee cake with a delicious cinnamon aroma while baking will make your mouth water with anticipation to cool and eat. This requires very little baking skills and is easy enough to get the kids to make. A wonderful semi homemade project to teach and learn baking skills that the kids will enjoy especially the end results. A delicate soft cake loaded with cinnamon streusel topping.

Streusel Topping:

• 1/3 cup baking mix (you can use complete pancake mix also)
• 1/3 cup packed brown sugar
• 1 teaspoon ground cinnamon
• 2 tablespoons firm butter or margarine
• Optional: 1/2 cup coarsely chopped pecans or walnuts
• Place in a bowl and mix this all together until crumbly and set this aside

Batter:

• 2 cups baking mix (you can use complete pancake mix also)
• 2/3 cup milk
• 3 tablespoons granulated sugar
• 1 egg
• 1 teaspoon ground cinnamon
• 1 teaspoon vanilla extract or maple extract

Directions:

1. Preheat the oven to 375 degrees. Grease a 9 x 12 inch square or rectangular pan.
2. In a medium-sized bowl add the baking mix, milk, sugar, egg, cinnamon, and vanilla or maple extract. Stir just until blended.
3. Pour into the greased pan and sprinkle with streusel.
4. Bake at 375 degrees preheated oven for around 20 minutes or until the center using a toothpick comes out clean.

Serve warm or cold both are delicious!

Tips:

• water can be substituted for the milk
• pumpkin or sunflower seeds can be used for nut allergies
• don't overmix the batter
• finely chopped apples, raisins and craisins can be added to the streusel topping
