    Dinner Scones with Jalapenos and Cheese

    I know what you're thinking, scones are usually sweet and plain or with fruits and that's true! We have a new spin on scones to serve up with chili, stews, and for people who want a little spice in their life. These cheesy jalapeno pepper scones will be the best buttery tasty scones you'll ever make for that next comfort food dinner you make during the cooler months. Give these are try they are delicious!

    Shopping List:

    • 12 tablespoons of chopped salted butter (make sure it is cold)
    • 3 1/2 cups AP flour
    • 1 tablespoon baking powder
    • 1/2 cup jalapenos, minced fine
    • 1 cup shredded pepper Jack cheese (or use all cheddar for less spiciness)
    • 1 cup extra sharp cheddar cheese
    • 1 cup buttermilk (1 tablespoon of vinegar to 1 cup milk let stand 5 minutes)
    • 1 egg
    • 1 tablespoon pepper juice or use some pickle juice

    Directions:

    1. Line a baking pan with parchment paper and preheat the oven to 400 degrees.
    2. In a large bowl of a food processor add the flour, baking powder, and salt with the cold butter then pulse just until coarse crumbs appear.
    3. Place the ingredients from the food processor in a bowl and add the buttermilk.
    4. Fold in the cheeses and peppers with juice just until combined.
    5. Roll out the dough on a floured board and cut into triangular shapes around 1/2 thickness.
    6. Place on a parchment-lined baking sheet.
    7. Bake at 400 degrees for 20 minutes until the edges and top are golden.
