    Classic Peanut Butter Cookies: A Nostalgic Treat

    One of my favorite cookies growing up that Mom always had for our cookie jar. These were very popular to bring to school bake sales and the cookies were always a big hit. Times have changed and although we don't bake them for school functions, we still have fond childhood memories while baking these and think of Mom.

    Peanut Butter Cookies

    • 2 sticks butter, melted
    • 1 cup sugar
    • 1 cup brown sugar, packed
    • 2 eggs
    • 1 tablespoon pure vanilla extract
    • 1 teaspoon salt
    • 2 cups peanut butter
    • 1 tablespoon baking soda
    • 3 cups AP flour

    Directions

    1. Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
    2. In a mixing bowl, combine the butter, creamy peanut butter, sugars, eggs, and vanilla extract. Mix until the ingredients are well incorporated.
    3. Stir in the salt, soda, and powder with flour.
    4. Scoop spoonfuls of the cookie dough and roll them into balls. Place the balls onto the prepared baking sheet, leaving some space between them to allow for spreading.
    5. Use a fork to create a crisscross pattern on top of each cookie. Dip the fork in a bit of sugar before pressing down to prevent sticking.
    6. Bake the cookies in the preheated oven for about 10-12 minutes, or until they are golden brown around the edges.
    7. Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes. This will help them set before transferring to a wire rack to cool completely.
    8. Note: 1 cup of chocolate chips can be added to the batter before baking if desired.
