    Classic Scottish Shortbread: A Timeless, Buttery Delight

    Shortbread cookies have been a classic treat that originated in Scotland. Although it was prepared during much of the 12th century, the cookie remained very popular through the centuries. This is a simple recipe with basic ingredients and the cookies are a wonderful crunchy buttery flavor that is timeless in flavors. Most of them are cut in squares or rounds and sprinkled with fine sugar or coarse sugar, either way a wonderful addition to any cookie lover. The cookies can be served with any hot beverage but traditionally with tea as an afternoon treat. These buttery gems just may become a favorite in your household, so a word of warning, make a double batch!

    Shortbread Cookies

    • 4 cups of AP flour
    • 1 cup of cubed cold butter
    • 1 cup sugar

    Directions:

    1. In a bowl mix all the ingredients together until it looks like coarse crumbs.
    2. Knead the dough until it forms evenly together.
    3. Add the mixture to an ungreased jelly roll-size pan 15 x 10 inches.
    4. Using fork tines prick the dough on top evenly.
    5. Bake for around 25 minutes in a preheated 400-degree oven until light brown.
    6. Cool and cut into squares
