    This homemade creamy tomato basil soup is bursting with fresh ingredients. Fresh Rosa plum tomatoes pureed into a luscious creamy basil mixture, it's divine enough to serve guests before that big holiday meal. It's full of tantalizing flavors and long after you serve this soup it will be a memorable addition to any dinner party you may be hosting. It's super easy to make in your own home with one important tool, a food processor.

    Creamy Tomato Basil Soup

    • 5 or 6 plum tomatoes (or use 2 cans of whole plum tomatoes drained)
    • 3 cups of tomato juice
    • 4 tablespoons olive oil
    • 4 garlic cloves minced
    • 1 cup chicken broth or vegetable
    • 1 tablespoon balsamic vinegar1 cup fresh basil leaves minced into small pieces ( around 14 basil leaves)
    • 1/2 cup butter
    • 1 cup heavy cream
    • salt and pepper to taste

    Directions:

    1. Put the tomatoes, broth, vinegar, and add in a food processor until smooth.
    2. In a small sauce pot saute the garlic in the olive oil for 3 minutes.
    3. Stir in the tomatoes and simmer for 30 minutes.
    4. Add the butter and cream just until the butter melts on very low heat for around 3 minutes DO NOT BOIL.
    5. Stir in the minced basil for another 2 minutes and serve.

    Serving Ideas:

    1. sandwiches
    2. tossed salad (soup and salad combo)
    3. cheesy garlic bread
    4. pita toast points
    5. croutons
    6. topped with mozzarella and melted
    7. served as an appetizer
    8. brunch or dinner

    Tip:

    for the freshest flavors, add the basil always at the end of cooking. Drizzle a little EVOO on top, freshly cracked black pepper with more basil leaves for presentation.
