    Homemade Pumpkin Cake with Cream Cheese Frosting

    A delicious fall cake made with pumpkin puree. A wonderful blend of spices makes this pumpkin cake with cream cheese frosting a perfect dessert for any pumpkin lovers. Garnished with nuts or pumpkin seeds, it's surely a great addition to any Holiday recipe collection.

    Shopping List:

    • Dry Ingredients:
    • 2 cups flour
    • 1 cup sugar
    • 1/4 teaspoon ground ginger
    • 1/4 teaspoon ground allspice
    • pinch of nutmeg
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon salt
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • Wet Ingredients:
    • 2 eggs
    • 1/2 cup oil
    • 1 teaspoon vanilla
    • 1 (15-ounce size) can pumpkin puree
    • Fold in:
    • 1-1/2 cups walnuts, chopped (or for nut allergies, use roasted pumpkin seeds chopped)
    • Note: if you prefer to not sure nuts of any kind, sprinkle with candies or mini chocolate chips or just dust the cake with powdered sugar

    Frosting Shopping List:

    • 1 (8 ounces) block of cream cheese, at room temperature
    • 6 tablespoon butter, at room temperature
    • 2 teaspoons heavy cream or whole milk
    • 1 teaspoon pure vanilla
    • 2 cups powdered sugar

    Directions:

    1. Grease a 9 x 9 square pan with butter or line with parchment paper.
    2. Preheat the oven to 350 degrees.
    3. In a large bowl, whisk all the dry ingredients together and set aside.
    4. In a clean bowl beat the wet ingredients except the pumpkin together.
    5. Stir in the pumpkin puree to the wet ingredients just to blended evenly.
    6. Blend the dry ingredients slowly into the wet ingredients just until combined.
    7. Bake at 350 degrees for around 30 to 35 minutes ( use a cake tester in the center to ensure it's completed cooking.)

    Frosting Directions:

    • In a clean bowl add the cream cheese and using an electric beat whip the cheese until smooth.
    • Add the butter and beat until blended then add the vanilla and slowly the powdered sugar with milk until creamy and fluffy.
    • Frost cooled cake (sprinkle the top with nuts if desired)
