    A cobbler can be defined as a dessert consisting of a fruit filling poured into a large baking dish and covered with a batter, biscuit, or dumpling before being baked. In the Southern states, a thick-crusted, deep dish is used with a top and bottom crust.

    Peach Cobbler's history can be traced back to the early 1800s. Enslaved West Africans in the southern states inspired this dessert by mixing peaches, spices, flour, and other accessible ingredients. The original peach cobblers were often topped with biscuit dough and baked.

    The origins of cobblers can be traced back to the British American colonies, where English settlers lacked the ingredients and equipment to make traditional puddings. Instead, they covered meat or fruit fillings with uncooked biscuits or dumplings and baked the dish.

    The origin of the name "cobbler" is thought to possibly derive from the archaic word "cobeler," which means wooden bowl. Not to be confused with a “Cobbler” which is someone who mends shoes. The verb "cobble" is defined as assembling from available parts.

    Below is an extremely easy recipe. I like to add a fair amount of cinnamon. But you be the judge of how much you would like to use. I prefer to use French Vanilla ice cream with all cobblers and pies. I feel it complements them best. But a regular vanilla ice cream would be fine.

    PEACH COBBLER RECIPE

    • 5 fresh peaches, peeled, cored, and sliced (about 4 cups) or substitute with canned peaches (1-quart jar, undrained)
    • ¾ cup granulated sugar
    • ¼ teaspoon salt
    • 6 Tablespoons butter
    • 1 cup all-purpose flour
    • 1 cup granulated sugar
    • 2 teaspoons baking powder
    • ¼ teaspoon salt
    • ¾ cup milk
    • ground cinnamon
    • Vanilla ice cream (optional)
    1. Add the sliced peaches, sugar, and salt to a medium saucepan and stir to combine.
      *(If using canned peaches, skip steps 1 & 2 and follow the directions starting at step 3)
    2. Cook on medium heat for a few minutes, until the sugar is dissolved. This step helps to bring out juices from the peaches. Remove from heat and set aside.
    3. Preheat oven to 350°F.
    4. Slice butter into pieces and dot the 9x13-inch baking dish with the butter.
    5. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven. Do not burn the butter.
    6. In a large bowl, mix the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
    7. Spoon the peaches and juice (or canned peaches, if using) over the batter. Sprinkle cinnamon generously over the top.
    8. Bake at 350°F for 35-40 minutes.
    9. Serve warm or cold. Best garnished with vanilla ice cream. I prefer French vanilla ice cream on baked goods.
    10. Refrigerate for lasting freshness.
