    Maple Mustard Chicken

    I don't recall where I found this recipe, but it is one of our favorites!! It's such an easy one to prepare, but tastes like it came from a fine dining restaurant. Yes, it's that good. I often double the sauce so that I can ensure that each bite gets some heavenly glaze! I've also served this over noodles or rice, so you'll want the additional sauce too! Here's all you need to make it:

    Ingredients:

    • 5 chicken thighs
    • 1/3 cup coarse ground dijon or honey dijon mustard
    • 1/3 cup maple syrup
    • 1 Tbl apple cider vinegar
    • salt and pepper to taste

    Combine sauce ingredients in a large bowl. Add chicken pieces and mix to coat well. Cover and place in fridge to marinade for at least 8 hours. When ready to cook, place chicken and sauce from bowl into a large skillet and cook until internal temperature reaches 165 degrees. Alternatively, you can bake it in large baking dish at 375 degrees for about 40-50 minutes or until it reaches 165 degrees.

    This makes a wonderful sauce and I often double it to serve over noodles or rice, or just to make sure each bite of chicken has that wonderful glaze.

    Don't worry if you are short on time. I have also made this and skipped the marinading time. It turns out just as well. Just bake or cook in a lightly greased skillet. Mix up sauce ingredients separately, and cook to thicken. Then toss chicken pieces in sauce and serve.

    Garnish with sprigs of thyme if desired.
