    Mango Berry Salad

    This salad is one of a few that I can not stop eating once I start. It's THAT good! It's so fresh and versatile too! Sometimes, we've doubled up on the mango, forgot the blueberries, or added chicken for a more robust and filling meal. The dressing though... I'm not sure that you can get it better than that personally.

    Anyway, here's what you'll need to make this fresh and amazing salad:

    Ingredients:

    (Serves about 6 side salads or 3 main salads)

    • 1 package spring mix lettuce (11 oz bag or tub)
    • 2 fresh mangoes, peeled and cubed
    • 1 cup fresh blueberries
    • 2 bups fresh strawberries, sliced
    • 1/2 cup candied sliced almonds

    Dressing:

    • 1, 8 oz container of vanilla yogurt
    • 1 Tbl lemon juice
    • 1 mango, peeled and cubed
    • pinch of salt
    • Sugar or honey
    • cinnamon, optional

    For the dressing, blend yogurt, lemon juice, and mango pieces. Taste and add pinch of salt or additional honey or sugar to taste. Blend until smooth.

    Next, in a large bowl, toss spring mix, cubed mangoes, blueberries, and sliced strawberries. Drizzle with dressing and top with candied almonds. Alternatively, serve dressing on the side.

    For a more complete meal, we like to add pieces of rotisserie chicken as well.

    * If your candied almonds do not have a little bit of cinnamon, add just a dash of cinnamon to the dressing. It seems to make everything "pop" that much more!

    * Adjust to your liking. Every variety of mango tastes just a little different on the sweetness level, as well as whatever yogurt you decide to use. Some will be sweeter than others, so adjust to your preference.
